Berlin has started talking and it’s sooo cute, “yes, peas!”
I found this recipe via google one morning and have made it my own. I like to make these when I have one or two bananas that are just a little too ripe. I find the texture of the banana makes these pancakes the perfect density. (I am not into fluffy cakes, so if you’re into traditional, this might not be for you.)
- 3 tablespoons of butter
- 1 cup of milk
- 2 eggs
- 1 or 2 mashed bananas
- 3/4 cup whole wheat flour
- 1 teaspoon of baking powder
I melt the butter in the microwave and add the eggs, milk and pre-mashed banana. Throw in the two dry ingredients and you’re ready to go.
Toss some coconut oil into the pan and use a soup spoon to make the perfect mini pancakes.
Fast, easy and the kids LOVE these… so do I.
