The day after grocery shopping is always the best. I usually put it off until Monday and then I just go pick up what I need for dinner and the next day. I have a feeling my quick trips to the grocery store every other day are about to come to a screeching halt with a baby in tow. I figure I better learn (and fast) some meal planning strategies. I blame my parents (yep, I know you’re reading this) for lacking this life skill. They own the grocery store in my home town so we would literally get groceries everyday. Our fridge was (probably still is) full of condiments and cheese.

My two new favourite breakfast foods…
1.Toast and Peanut Butter.
I make My husband makes me a toasted sandwich before work and then eat it at my desk. My commute is only 15 minutes so it’s still pretty good by the time I get around to it.
2. Yogurt Parfait! This week: mangos, pomegranate (the two most challenging fruits to prepare), vanilla greek yogurt and granola.
Lunch – I made a quinoa salad sh!t mix. It was ok, I wouldn’t recommend it. Sweet potato, red pepper, chick peas, cranberries, sunflower seeds, feta, oil and vinegar.
Snacks – Clementines! Love that these are back in season.
Dinner – Jeff and I made dinner together. Tilapia, sautéed zucchini and mushrooms and sauerkraut rice*.
*Sauerkraut Rice – This stuff is amazing. Just sauté sauerkraut and onion and make rice as usual. When the rice is finished mix it all together and bake it. (Thanks to my Mom and Grandma for the recipe … I know my Grandma makes it a bit differently but I can never remember.)
Dessert – I bought this Frozen Yogurt and was so pumped to have some. When I opened it, the top was frozen over with ice crystals. I put it back in the freezer (with the receipt) full of disappointment. I planned to exchange it, but ended up scrapping off the crystals the next day and diving in! 🙂 It tasted fine, just hated to waste the top bit.
After all that, I still didn’t make a meal plan for the week. Jeff ended up coming home with more groceries on Monday and we had to pick wraps and avocados on Wednesday… ugh. 3 for 4. Maybe next week?
