WIAW – Fish Tacos with Lime Cilantro and Mango Salsa


So here goes my second attempt at ‘What I ate Wednesday’.  Since I have a day job and my breakfast and snacks are the same everyday and boring; I thought I would mix up the whole concept of WIAW and share a new recipe.  (Can I do that?)  I mean technically, it is what I ate Tuesday and Wednesday for lunch and dinner.  I had a vision but couldn’t seem to find the right recipe.  So I mixed, matched and modified.  Thank you Master Chef episode 4/14 for the craving and inspiration.

Sorry the photos are so crappy.  The pics below are actually of the left overs… you know you made something good when you can’t be bothered to take photos.  Or you were just REALLY hungry.

Fish Tacos with Lime Cilantro Slaw and Mango Salsa

Avocado Mango Salsa (modified from all recipies.com)

  • Mango (1)
  • Avocado (1)
  • Red Onion
  • Garlic Chili sauce (spoonful)
  • Salt and Pepper
  • Cilantro (A big squeeze from the Gourmet Garden)
  • Lime Juice

 Lime Cilantro Slaw (modified from food.com)

  • 3 tablespoons Fresh Lime Juice
  • 1 tablespoon Extra Virgin Olive Oil
  • 2 teaspoons Sugar
  • Cilantro (A squeeze)
  • 1 package pre-mixed slaw
  • Garlic
  • Rice Vinegar
  • Spoonful of Mayo

Sauce

  • Presidents Choice Titziki Greek Yogurt dressing
  • Sriracha hot sauce
  • Cilantro (squeeze)
  • Lime Juice

Fish (Mahi-Mahi or Tilapia)

Mix taco seasoning and white flour.  Cut fish (mahi-mahi) into cubes.  Lightly dust in flour/taco mix.  Heat oil in a pan and lightly fry until cooked.

Building your taco:

Heat up white soft taco shells in the oven.  You can use multigrain but I prefer old-fashioned white when it comes to soft tacos.  Don’t mess with a good thing.  And layer:

  • Warm tortilla shell.
  • Spoonful of slaw.
  • Fish.
  • Salsa.
  • Sauce.

PUT IT IN YOUR MOUTH!  Don’t choke because they are THAT good.
